Seasonal food is not only sustainable but tastier and often more affordable. We’ve teamed up with @bigdishenergyy to create the perfect meat-free summer dish – Crispy Cauliflower Tacos. Crispy Cauliflower Tacos Serves 4Time – 1 hour Ingredients ● 1 large cauliflower● 3 tbsp corn flour● 5 tbsp water● 1 tsp smoked paprika● 1 tsp garlic granules● 1 tsp cumin● 75 g panko breadcrumbs● Salt and black pepper● 2 corn on the cob or 1 can of sweet corn● 2-3 spring onions● Handful of coriander● 1 lime● Taco shells or wraps● 4 tbsp greek yoghurt● Handful of radishes● 3 tbsp caster sugar● 3 tbsp red wine vinegar Method 1. Preheat to 180 degrees. 2. Chop the cauliflower into small florets, the stem and leaves can also be chopped and included in this recipe! 3. Mix your cornflour, smoked paprika, cumin, garlic powder and water in a large bowl until combined, add a splash more water if it feels too thick. Coat the cauliflower in the corn flour mixture making sure to get every piece well covered. 4. In a separate bowl, add the breadcrumbs and seasoning. Coat the cauliflower in the breadcrumbs. 5. Spread the cauliflower on a baking tray and bake at 180 degrees for 30 minutes. 6. While this cooks, finely chop your radishes and add to a jar with the red wine vinegar and caster sugar. Shake well and leave to pickle for at least 20 minutes. 7. If using corn on the cob, boil for 5 minutes before charring in a griddle pan or directly on the hob flame using tongs. Once nicely charred, move to a chopping board and slice the corn off the cob. 8. Once the cauliflower has been in for 30 mins, combine the soy sauce, sriracha and juice of half a lime and coat the cauliflower with the mixture. Return to the oven for another 10-15 minutes. 9. Chop your coriander, spring onions and lime into wedges. 10. Top your taco wrap with greek yoghurt, crispy cauliflower pieces, corn, spring onion, coriander, radish and a squeeze of fresh lime.
